3||0|1085|0|yes 0|0|0|||1||Luckiest Nerd on Earth|laudre||02:48:38|06/19/2007|I haven%27t been much of a poster here even since I came back a few months ago%2C so aside from a passing reference in the General forum it hasn%27t come up that I%27m now a married man%2C and have been so since November of %2705.%0D%0A%0D%0AI am married to the bestest wife on planet Earth.%0D%0A%0D%0AI could go into many reasons just why that is%2C but in the interest of %28relative%29 brevity I%27ll stick to the yummy foods I%27ve been fed over the past couple of days.%0D%0A%0D%0AYesterday %28by which I mean Sunday%3B even though it%27s Tuesday technically I%27m still on Monday time%29%2C because my wife Mel was unsatisfied with her previous attempt at meatloaf %28a decidedly delicious concoction%2C that was%2C though she complained of its relative dryness and blandness%29%2C we acquired makings for a new batch%2C along with the ingredients for from-scratch macaroni %28actually%2C shells%2C it ended up being%29 and cheese.%0D%0A%0D%0AThe meatloaf%3F It was made with beef %28ground chuck%2C to be precise%29%2C veal%2C and in lieu of the usual pork%2C lamb.%0D%0A%0D%0AFor those of you that don%27t know%2C I was once a vegetarian%3B it%27s been some years since I started eating meat again%2C but it was eating lamb at a churrascaria that showed me that I%27d been incorrect all those years. As wonderful as good grass-fed beef can be%2C it is truly lamb that is proof that the gods intended for humans to eat the flesh of mammals. If you have never had good lamb%2C then perhaps the best quick fix is to hie thyself to a good Indian restaurant and get some lamb curry there %28assuming you don%27t want to shell out to eat a churrascaria%2C something everyone who eats meat should do at least once in their lives%2C if they don%27t mind waddling for several hours afterwards%29.%0D%0A%0D%0AAnyway%2C not only did she put lamb in it%2C and seasoned it very liberally %28but not overmuch%29%2C she somehow got it to retain %5Bi%5Devery single iota of moistness%5B%2Fi%5D inherent to the component meats%2C so that it as juicy and succulent as a good New York strip. And it tastes %5Bi%5Ddivine%5B%2Fi%5D.%0D%0A%0D%0AAnd then there%27s the aforementioned shells and cheese. The base of the cheese sauce was actually a bechemel -- a classic French white sauce%2C made with milk and better -- she made herself%2C into which she melted a large amount of sharp cheddar. This was mixed with the shells and smoked andouille sausage %28I introduced her to the Bachelor Cuisine trick of mixing meat with boxed mac and cheese%2C with smoked sausage as my meat of choice%29%2C topped with the remainder of the cheese and some bread crumbs%2C and browned on top.%0D%0A%0D%0AIt is %5Bi%5Dheavenly%5B%2Fi%5D -- not overly salty and sweet like storebought stuff %28and I get the relatively good stuff%2C the kind that has stout noodles and fluid processed cheese food product%2C not skinny noodles and mysterious yellow powder%29.%0D%0A%0D%0AThe stuff is rich%2C I%27ll admit%2C but that just means that it%27s probably going to last us all %5Bi%5Dweek%5B%2Fi%5D. And it%27s not like I%27m going to get sick of it.%0D%0A%0D%0AOh%2C but that%27s not all.%0D%0A%0D%0AToday%2C she took some chicken soup she made last week -- cooked so that we could add noodles to it when we ate it%2C for chicken noodle soup -- and%2C since we were out of egg noodles%2C put almost an entire box of whole wheat spaghetti we had laying around in%2C producing something so dense with noodles that it really isn%27t a soup anymore%2C but something in a happy medium between soup and a pasta-with-sauce dish.
