Given his personality as described in Kitchen Confidential, I can see him taking the first ship out after First Contact, and charging headlong into culinary adventures. About ten years in, he eats something that agrees with him, and now he's living the immortal's life. I'm imagining some kind of symbiote that wants to keep Bourdain alive as long as there's potential for him to eat something new and unusual.
