People call it that because it was descended from the M48 Patton, but officially it was merely, in the ineffable poetry of the Army's naming system, "105mm gun, full tracked, combat tank, M60". I guess someone decided that naming a fourth tank after George Patton would have been a bit silly. :)
(For that matter, the Leopard 1 wasn't really the first German tank to be called Leopard, despite the explicit number in its name. But I suppose it could be argued that it was, since the 1940s Leopard was canceled before it could go into production.)
