I believe there's also a scene in the New Avalon Chet's in Requiem for a Lensman; I forget how the waiter was dressed that time. They're always some kind of White Legion or MILARM personnel, but the front-of-house staff are not customarily dressed as Chet himself - the usual response when customers (usually parents who have their children with them) ask is that he's on assignment with the Fleet just then.
