I think the "Raven" designations are just what the aircraft themselves are called (cf. Fulcrum, Eagle, et al.), though in that case why "Demon" I don't know. Maybe because Firestorm doesn't fit. :)

Could be. Like I say, I doubt the game designers gave it a ton of thought beyond sounding badass. It's pretty clear from context that "Big Sky" is the Skyranger pilot's callsign, not the aircraft's, though.
