Actually with Ezio (AC2, AC:B, AC:R) or Altair (AC, AC:R), you can pretty much do just that. He only sneaks when he needs to, and even then it's mostly Parkour tricks, plus lots & lots of fun roof hopping, and then when he needs to he kills absolutely everyone in the room in 20 seconds or less or your money back. A humorous exaggeration, but not by much. And there really isn't all that much 'unavoidable sneaky bit' areas. Its not Syphon Filter or Splinter Cell by any stretch at all, and is generally more action oriented then any three Metal Gear Solid titles combined (plus PS2's Oni). Think of the game (and character) more like Batman but with out the 'no killing' code, although very very strict as to who he targets. Altair is a little more...amoral and not quite so picky about who ends up hurt if they're in his way. Ezio on the other hand hates innocent/wrong-time-wrong-place civilian collateral damage/injuries/deaths.

Heck, with the Detan longevity, you likely could have an UF version Ezio facing off against Altair in this. Altair being of the 'ends justify the means in all things' dark-Jedi/not-quite-Sith mentality, while Ezio is much more moderate, and refuses to harm innocents (and even generally only knocks out guards that are just doing their jobs/aren't really 'evil').
